Today I had a painful filling done, so I wanted something easy and yummy, and soft to chew. So, tonight we are having spaghetti carbonara! I have a recipe that is not so creamy of a sauce, but my kids like creamy, so I am combining several recipes. I hope it turns out okay!
1 lb pasta
heavy cream (1/4 to 1/2 cup)
eggs (3-4)
bacon or pancetta (I am using bacon)
1 tsp evoo
1 tsp red pepper flakes
4 garlic cloves
2 tbsp chopped fresh basil
3/4 cup to 1 cup romano, parmesian, and asiago cheese
salt and pepper to taste
Cook spaghetti or pasta al dente.
Heat a saucepan with EVOO over medium heat. add the bacon and the garlic and saute until it is brown and crisp. Add the red pepper flakes and allow them to cook for a minute or so.
In a large bowl, combine the cream, cheese, eggs, and basil to blend.
Drain the pasata, toss with the egg and cream mixture, then add the bacon, garlic, pepper mixture.
Serve immediately, with additional grated cheese if you like.

One year...
Today I am reflecting back on the year. We have been in Florida now for one year and the kids are soon to start back to school. I delivered a casserole this morning for a back to school breakfast for the middle school teachers. I cannot believe my baby is going to be in sixth grade! I am THRILLED with the school she will be attending. I am thankful for the Lord giving me the wisdom to investigate this school boundary when house hunting... I know it is His guidance that gave us the wisdom to select this house! I was thinking back on all we have done to make this house a home.... We have put in wood flooring, granite countertops, painted the outside, landscaped, put in all new light fixtures and fans... it is quite incredible the difference in our home today from one year ago...
