Out all day, and dinner is almost ready!

I am a fan of the crock pot, but some things just don't go as planned when I use it... this recipe turns out EVERY time!!

Crock pot soft tacos

4 chicken breasts
1 package of taco seasoning (tonight I made my own, we will see how it turns out!)
1 can corn
1 can black beans
1 can rotel

Rub chicken with taco seasoning and place in crock pot. Put corn, black beans, and rotel on top. Cover and cook on low for 8 hours and high for 4 hours.
When chicken is cooked, take out and cut into shreds. Serve with either taco shells or flour tortillas. I serve with salsa and sour cream, and cheese... MMMMM good!! I use leftover chicken on salads for the week :)

This dinner gets a "Thank you God" :)

So, last night was Ash Wednesday. In the tradition of my mother, I made open faced tuna sandwiches. Needless to say, Carly and Jack were not terribly fond, but ate anyway. So, it is no wonder when I told Carly what was for dinner tonight, she looked to the heavens and said out loud, "Thank you God!! You answered my prayers!"

Here is another favorite in our house...

Ham Casserole

1 package frozen shredded hash brown potatoes (the recipe calls for 24 oz, tonight I am using a 32 oz bag from Target)

1/3-1/2 cup butter

1 c. shredded monterey jack cheese
1 c. shredded hot pepper jack cheese
1 c. diced ham (I always use more!!)
1/2 c. half and half
2 eggs
1/4 tsp. salt
pepper to taste

Press thawed has browns into 9 x 13 casserole dish. Brush with melted butter. Bake a 425 for 25 minutes.
Remove from oven and sprinkle with cheeses and ham evenly.
Beat half and half with eggs, salt, and pepper. Pour over cheeses and ham. Bake uncovered at 350 for 30-40 minutes or until a knife inserted in the center comes out clean.
